Vermentino Oro d'Isee 2023 La Baia del Sole

'Oro d'Isée' was born from our past and links the name of our great-grandfather, who was called “ISEO”, to his habit of collecting the best, most “GOLDEN” bunches in the vineyard and making a small batch of wine from them to be kept hidden and only drunk on the most important festive occasions. With this label, we sought to revive this concept of a small batch of excellent wine, choosing each year the best Vermentino grapes from two of our vineyards and vinifying them separately from the others, with a cold maceration on the skins of about 18 hours to enhance its organoleptic properties to the fullest. Selection of the grapes, maceration in a press at controlled temperature for 24 hours, gentle vacuum pressing using only free-run juice. Cooling to 10°C with natural decantation. Fermentation at controlled temperature of 16-17°C for 15 days. Aging on fine lees for 90 days. Refining in steel.
