Sauvignon Blanc 2021 Les jardins de Theseiis Loira

Paul-André and Anouk Risse left their biology careers in 2012 to embark on a new journey by enrolling together in an international master's program focused on wine and viticulture. After two years filled with experiences in France and Italy, and a stint in Canada where they explored conventional viticulture and winemaking, they returned to Europe to start their own venture. Mindful of biodiversity and eager to pursue a path rooted in organic agriculture principles, they connected with several small producers in the organic and biodynamic sectors. Eventually, they purchased part of Bruno Allion's vineyard, which has been farmed biodynamically since 1997, located in Thésée, in the Val de Cher, the heart of the Loire Valley. Just a few kilometers from Tours, the vineyard is enchanting, facing south and sloping down towards the Cher, interspersed with fruit trees and small gardens. The traditional cellars are carved into tuff stone. Together with Bruno, now retired, they conducted their first harvest in 2017, continuing independently from then on: thus begins the adventure of Jardin de Theseiis. On just over 5 hectares, there are vines older than 50 years, planted by Bruno's father. Their healthy roots thrive in clay-siliceous and sandy soils, ensuring unique wines that reflect the vintage and terroir: Sauvignon, Romorantin, Pinot d'Aunis, and Gamay. No added sulfur, no carbonic maceration for the reds, and direct pressing for the whites.

Complex and full-bodied with persistent vegetal notes like tomato and bell pepper, accompanied by hints of ripe fruit.
