Roero Valdovato 2016 Fornace
The Valdovato Roero DOCG is an intense red wine produced by Cascina Fornace, a highly regarded winery in Roero. The vineyards where the Nebbiolo grapes are grown for this pure vinification are owned by the winery and are located in the Santo Stefano Roero area. Here, practices adhere to the principles of organic farming, and the vines derive essential nutrients from predominantly sandy soils. The significant slopes ensure optimal exposure for the grape clusters. After a traditional harvest, vinification begins with a spontaneous alcoholic fermentation using indigenous yeasts, followed by a long maceration on the skins. The aging process lasts for a minimum of ten months in large oak barrels that have been used for the second or third time. The Valdovato Roero DOCG is then bottled without clarification. It is a wine with very delicate fruity notes; on the palate, it is characterized as dry, crisp, tannic, and full-bodied, certainly harmonious. While it has the potential to age for 5 to 10 years in the cellar, this wine can also be enjoyed immediately with great satisfaction.
