Nebbiolo Madonna Como 2022 Massimo Penna
The winemaking process is carried out traditionally using submerged cap fermentation. Fermentation occurs at a controlled temperature of around 28°C for an optimal period, after which the resulting wine is repeatedly racked to achieve good separation from the lees. It is then aged in vitrified concrete barrels.
