Il Sangiosè IGT 2022 Usiglian del Vescovo

The Sangiovese grapes are hand-picked. The grapes are destemmed and sorted through a vibrating sorting table, followed by maceration in a stainless-steel tank until the desired color intensity and nuances are achieved. At that point, the wine is "drained" and fermentation is started, conducted at 18°C. At the end of fermentation, the coarser lees are removed through racking, and the wine undergoes aging on the fine lees with daily stirring until January. In February, the wine is bottled without clarification, only filtered.
