Etna Rosato 2022 DOC Al-Cantara

In the Etna tradition, the true Nerello Mascalese was originally rosé and especially transparent. The grapes used are grown on the slopes of Mount Etna at an altitude of about 620 meters above sea level. The planting density is 6000 vines per hectare, using a trellising system with a double cordon pruning method featuring three spurs per vine. With this wine, we aim to reinterpret the Etna tradition, representing the union of fire and sea. Perhaps it’s madness, but the passion and respect for this land and its many facets are worthy of mention; this is a “unique wine” that fully respects and interprets the terroir as a singular entity, preserving tradition. Manual harvesting takes place in mid-October. The grapes, picked in crates, are crushed bunch by bunch, followed by a 12-hour cold maceration before pressing. After collecting the must, it is left to decant for 24 hours. The purified must is fermented in stainless steel tanks at temperatures of 14-16°C for about 15 days. Once the alcoholic fermentation phase is complete, the wine begins to age on its fine lees. In February, the wine is bottled to preserve the integrity of its primary aromas and its exquisite freshness.

Fresh, with good acidity and sapidity.

Aroma

Aromatic complexity characterized by notes of rose and small red fruits, alongside hints of pineapple and apricot with a mineral note.
