The origin of this grape variety is uncertain. Some scholars believe it originated on the hills of Monferrato, while others argue its birthplace is Liguria. Thanks to the commercial exchanges that took place during the Middle Ages, it spread to Piedmont, but it is only from the 18th century that we have certain records of its presence in our vineyards, when, speaking of production areas, Acqui and Alessandria were mentioned, but not the Langhe, an area today considered one of the most important for the development of this grape. The name "Dolcetto" comes from the particular sweetness of its pulp, while the wines are exclusively dry. A rather temperamental grape, it responds differently to various environmental conditions. The Dolcetto from the Madonna Como vineyard is characterized by low acidity and a pleasant bitter aftertaste. It is suitable for moderate aging, which enhances its harmony and complexity.
