A wine that has become the symbol of the transformation of Sicilian wine. It was born from the desire to compete globally in the production of this noble and widespread grape variety. After a long journey that began in 1985, full of surprises and successes, today Planeta Chardonnay is an icon for all of Sicily. The vineyards of Ulmo and Maroccoli, cultivated according to sustainable and organic practices, are unique in terms of location and terroir. The fermentation and aging in French oak, careful and precise, deliver a wine that is unique for both its grace and power. CULTIVATION METHOD: according to the principles of organic farming and the SOStain® protocol; soils covered with clover, vetch, yellow mustard, and spontaneous flora to increase organic matter and nitrogen content, promoting soil microfauna vitality; plant protection with minimal quantities of sulfur and copper; pest control with beneficial insects, sexual confusion, and the application of natural biostimulants such as zeolite, kaolin, and plant extracts. WINEMAKING: The grapes were handpicked into 16 kg boxes, refrigerated at around 12-14°C. They were then destemmed, crushed, and passed to soft pressing and static sedimentation at low temperatures (6-7°C). The clear juice was then transferred and fermented in 225L Allier oak barrels at about 17-19°C for 5-7 days. After fermentation, the wine was aged on its primary lees with bâtonnage done weekly for the first 5 months, then every 14 days until completing the 11 months. Finally, it was bottled. AGING: in 225L Allier oak barrels, 40% new, 30% second use, and 30% third use.

Soft, supported by a refreshing acidic vein that accompanies the entire tasting. A subtle mineral trait harmonizes the flavor of ripe yellow peaches, acacia honey, and almond paste.

More smoky, cereal, and toasted aromas emerge on the powerful and balanced finish.
