Chardonnay Adagio IGT 2016 La Collina delle Fate

The vineyards stand on medium-textured soils, with a calcareous tendency. The layout of the vineyards is at an altitude ranging from 300 to 500 meters above sea level, with a south-southwest exposure. During the first decade of August, the grapes are washed using water and citric acid, simply to remove dust and insects; subsequently, the grapes are manually harvested. If the ripening curve allows, the harvest will be done at night to collect the grapes at lower temperatures, avoiding the first signs of deterioration. An additional cleaning is done through a sorting table to remove any leaves and unattractive bunches. The grape berries will be separated from the stems using a destemmer placed in the reception area. Winemaking - The obtained grapes will be sent to a hopper where carbon dioxide is pumped in to prevent any form of oxidation, then to a heat exchanger (tube-in-tube) to lower the temperature of the grapes (from an initial 26-28°C to 13°C). At this point, the white grape berries will go into the press to extract the must, and only the best will be transferred into 20hl French oak barrels (not toasted), where it will ferment for eight months. Aging: From 3 to 4 years.

Straw yellow.

Taste

Soft but complete, with a tangy vein and a reminder of the fruits promised by the nose, complemented by a light citrus sensation. The finish has a good savoriness and a mineral trace.

Aroma

Exotic in its fruit profile, with pineapple and passion fruit, and spicy notes evoking vanilla and blonde tobacco.
