The manual grape harvest is done in boxes when the grapes are in advanced ripeness, but not overripe. In the winery, the grapes are destemmed and crushed in vertical stainless steel tanks, where alcoholic fermentation takes place along with skin maceration for about 50 to 60 days. During this period, several daily pump-overs are performed to enhance the extraction of color and tannin. After pressing and malolactic fermentation, the wine is transferred to 2,000-liter oak barrels for approximately 36 months of aging. At the end of this period, the wine is bottled and further aged in the winery before being released for sale.
