Dante Rivetti, an agricultural company founded in the 1970s, now boasts 50 hectares of vineyard land. The production philosophy is focused on respect and care for the environment. No chemical substances are used in the vineyards, and even the materials for cultivation are biodegradable. The winery is powered by a photovoltaic system, and the premises are partially underground or insulated, maintaining a constant temperature year-round without the need for air conditioning. A standout feature of the entire process is the method of Vermiculture, which allows the transformation of organic waste into humus. The Barbaresco Bricco de Neueis (Bricco di Neive) by Dante Rivetti is produced exclusively in the best vintages. Old vines planted on clay and limestone soils undergo an initial 24-month aging in large Slavonian oak barrels, with a small portion aged in small French oak barrels, followed by an additional 12 months in large barrels for a total of three years. The subsequent 18 months in the bottle earns this label the mention of ‘reserve.’ This is the recipe for the Barbaresco Bricco di Neive Riserva according to the Rivetti family.
