Nebbiolo Arposis DOC 2018 Massimo Penna
The winemaking process is carried out traditionally using submerged cap fermentation. Fermentation is conducted at a controlled temperature of around 28°C for the optimal period, and the resulting wine is repeatedly racked to achieve good separation from the lees. It is then aged in vitrified concrete barrels.
