The Pinot Bianco Collio \u2018Santarosa\u2019 from Castello di Spessa is a pure expression of Pinot Bianco from vines planted in 2000 on soils composed of the characteristic ponca, a type of soil made up of an alternating layers of marl and sandstone. At the beginning of September, the grape clusters are harvested, then gently pressed before the alcoholic fermentation of the must takes place in stainless steel vats at a controlled temperature of 16-18\u00b0C.
