The blend includes 50% Meunier, 30% Pinot Noir, and 20% Chardonnay, vinified separately and enriched with solera-aged reserve wines. Harvesting is manual, followed by pressing and spontaneous alcoholic fermentation in steel vats, led by indigenous yeasts. After racking, a six-month maturation period in steel precedes bottling and the second fermentation.
